Description:
The first two times I roasted this green bean I got a very strong steamed carrot flavor.  The description of honey that was initially given for this coffee was far from my experience.  By roasting the beans a bit longer and reaching a darker medium roast I did get the honey flavor.  The aroma of the coffee does give a nutty, honey flavor.  I hate to say it, but it might remind you of the taste you get from honey-nut Cheerios.  However, the flavor doesn’t have the breakfast cereal flavor and when served hot, or with milk, it comes across as a nice breakfast coffee.  I don’t have a croissant, but if I did, I would certainly enjoy it with this coffee.

The mouth feel is nice and moderately viscous, the fore-palate brings the smokey, nutty flavor that one finds in many darker roasts.  Swishing the coffee around in my mouth really accents the bright acidity and the sweetness of the coffee as the aromatics bounce up into the nasal passage.  Breathing through the nose after swishing brings back the honey accents, which is a fantastic flavor and after-taste.

Also quite tasty with Chocolate Lava Cake [AKA Crack Cocaine Cake, it is that addictive]
